Creamy Lemon Basil Pasta
Instructions:
Creamy Lemon Basil Sauce:
1. Juice and and zest lemon in a small bowl.
2. Combine all sauce ingredients in food processor and blend for 1-2 minutes or until smooth & creamy. Set aside.
Pasta:
1. Prepare pasta according to directions on box. Set aside.
2. Sauté chopped Bilinski’s and mushrooms together with a dash of olive oil (or your cooking oil of choice) on medium heat.
3. Once Bilinski’s begin to brown and mushrooms soften, add spinach and cherry tomatoes to pan. Sauté for an additional 2-3 minutes, until they begin to soften.
4. Toss pan mixture with pasta, adding lemon basil sauce to taste!
Ingredients:
Serves 4
1 package Mild Italian Bilinski’s Chicken Sausage, sliced
1 box pasta shells (swap out for Banza chickpea pasta shells if desired!)
1 tsp olive oil
1 bunch organic spinach
1/2 cup cherry tomatoes
1 cup sliced button mushrooms
Creamy Lemon Basil Sauce:
1/2 cup tahini
1/2 cup warm water
1/2 cup lemon (juice & zest)
1 tbsp apple cider vinegar
1/2 cup fresh basil (packed)
1 garlic clove
Salt & pepper, to taste
