Hi everyone! I’m Stacie, owner of Bilinski’s Sausage Company. I’m the third generation of sausage makers and when it was my turn to head the family business, I knew I wanted to do things a bit differently.

I’m proud of how far we’ve come. Like many sausage makers, nearly 40 years ago, Bilinski’s was known for our traditional, old world sausages, like kielbasa. When I joined the company, my mission was to focus on chicken (a better-for-you meat), that was raised with the highest standards of animal welfare, combined with fresh, flavorful vegetables, fruits and whole herbs and spices. We stand behind our commitment to real food to this day.

Today, our mission at Bilinski’s is simple: make better food to make a better world.

From the ground up, we’re working to build a better world for animals, by supporting farmers that are raising the bar for animal welfare.

We only use chicken that is raised with transparency and animal welfare as a priority. We’re proud to be certified by GAP, a non-profit alliance dedicated to improving farm animal welfare. Our organic chickens are raised to Step 3 standards or higher, meaning we ensure they have enhanced access to the outdoors, with plenty of space to roam, forage and lead happy, healthy lifestyles. Our goal is to help all our farmers reach Step 4, where chickens are fully pasture-raised.

We’re creating products that keep future generations in mind by using ingredients that are raised and grown responsibly, with respect for the environment.

We purchase whole ingredients that are GMO-free and sustainably sourced, and buy from businesses close to home whenever possible. Our products are nitrite- and preservative-free, and our happy chickens are always raised with no antibiotics, no animal by-products in their feed, and no hormones.

We’re making real food, in reasonable portions that tastes great, while still being wholesome and nutritious.

It’s the inside that counts, right? With Bilinski’s, what you see on our nutrition labels, is what you get.

We make our sausages fresh daily, and blend all our own spice mixes in-house with whole ingredients. You will never find generic “spices” or “flavorings” in our products.

All our products are gluten-free and nut-free, and most of our flavors are dairy and casein-free as well. 

On top of our sausages being thoughtfully made from the inside-out, we are one of the few casing-free chicken sausages available. We’ve always thought the norm of having a pork casing on a chicken sausage was a bit odd. Plus, having no casing cuts down on fats, allergens and makes our sausages that much easier to incorporate into meals.

Food is a journey, not a destination. Ingredients– and the lands and hands that bring them to your plate– matter. From the ground up, our simple ingredients are sourced and grown with integrity.

  1. I’m very interested in your kielbasa. Our family is Polish and has to travel to LA to get decent kielbasa. We were able to get it in NJ in the butcher shops but not in our county. Thank you . Can’t wait to try your mushroom sausage.
