
Shepard’s Pie

This comforting Italian-style Shepherd’s Pie recipe with chicken sausage is perfect for cooler weather!
Ingredients:
Serves 4-5
Mashed Potato Topping
- 4-5 russet potatoes, peeled and quartered
- ½ cup milk
- 1 cup + ½ cup shredded mozzarella cheese
- Salt & pepper, to taste
- 2 tbsp butter, optional
- Fresh parsley, for garnish
Sausage Filling
- 2 tbsp olive oil
- 1 package Bilinski’s Wild Mushroom Chicken Sausages, crumbled
- 2-3 cloves garlic, minced
- ½ large onion, diced
- 1 cup of frozen small mixed vegetables (any combination of peas, corn, and carrots)
- 2 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp Italian seasoning
- 2 tbsp flour
- ¼ – ½ cup chicken broth (or water)
- Salt & pepper, to taste
Instructions:
Mashed Potatoes
1. Bring a large pot of salted water to a boil and add the quartered potatoes. Once boiling, cook until the potatoes are fork tender, about 15 minutes.
2. Drain the water completely and set the pot with potatoes back on the stove.
3. Add in milk, salt, pepper, and butter (if desired) and mash with a potato masher until smooth and spreadable. Then fold in ½ cup of the mozzarella cheese and set aside.
Sausage Filling
1. Preheat the oven to 350°. In a large skillet, heat the olive oil on medium high heat and add in garlic and onion. Sauté for about 2 minutes or until onions are slightly translucent.
2. Next, add in the crumbled chicken sausage and frozen vegetables, sauteeing until vegetables have slightly softened, and the sausages have slightly browned. Then add Italian seasoning, garlic powder, onion powder, salt and pepper.
3. Lastly, add the flour and broth, stirring on a low temperature until the flour is well combined and the mixture has slightly thickened.
Assembly
1. In a 9×11 baking dish, layer the sausage filling in an even layer at the bottom of the dish. Then cover completely with a layer of the mashed potatoes.
2. Bake for 20 minutes, remove from oven, and add remaining cheese. Increase oven temperature to 400F and bake for another 5-10 minutes or until cheese has melted. Garnish with fresh parsley and enjoy!
